Nice but it looks like a lot of work for a lazy guy like me.  I buy low carb cookies made by High Key on Amazon but they are kind of pricey.
Type 2 since 1993.  Control with LCHF diet.

It looks very interesting and it seems that portion control would be MY problem by not eating too many cookies.  :)

It looks good, but I've really gotten out of the habit of eating cookies. I would probably have a portion control problem with these too, they look really yummy.
