Steak Soup from Paradise Grill

As I understand it, the Branson, Missouri, restaurant that featured this soup is no longer in business, although there IS presently a Paradise Grill & Steakhouse in Branson. At any rate - this recipe is a keeper.

1½ lbs. ground beef
2 cups chopped onion
1 cup sliced carrots
1 cup diced celery
1 tbsp. minced garlic
3 cans chicken broth
1 pint canned tomatoes
2 tbsp. worcestershire sauce
1 tsp. tabasco sauce
1/2 tsp. black pepper
1/4 cup butter
1/2 cup flour (delete this for best low-carb)

Brown the ground beef in a large kettle, adding onion, carrots, celery & garlic and cooking until vegetables are almost tender - 10-12 minutes. Pour off grease if you must, but for LCHF, it isn't necessary. Add broth, tomatoes, Worcestershire, Tabasco and black pepper; bring to boiling, reduce heat and cook 15 minutes.

For low-carb version, delete the flour and save yourself doing this step (the soup will still be splendid): As the soup cooks, melt the butter in a small skillet, add the flour and cook over medium/high heat, stirring constantly, until flour turns a deep brown color. Whisk it into the soup; simmer 15 minutes longer. Makes 6 - 8 servings.

calories: 475
protein: 24g
fat: 32g
sat fat: 14g
chol: 106mg
carb: 23g
(delete flour from recipe and deduct 16g of carb)

Calculations based on 8 servings:
calories: 355
protein: 18g
fat: 24g
sat fat: 11g
chol: 79mg
carb: 17g
(delete flour from recipe and deduct 12g carbs)

 :-[  This is why I never have a true fasting blood sugar . . . after a three-hour sleep (and about a six-hour fast), I awoke just before midnight, and darn! That soup was shouting at me from clear inside the refrigerator!  :P  So I ate a cupful and it's one of those dishes that keeps getting better the longer it sets. Good thing it makes a big kettleful.  ;D

One must not eat for 8 hours for it to be a true fasting, right ?

That's how I've understood it . . . I just hate to waste a strip if I've eaten less than eight hours before. I suspect others do differently.  8)

This really looks good!  I think I am going to make a single serve, somewhat revised version for dinner tonight.  The weather is perfect for soup!

I don't have any hamburger but I do have a ground lamb patty.  All the veggies I have (1/2) of a fresh roma tomato should be enough) and even chicken bone broth.  No flour thickener for me!  Maybe some sour cream or cream cheese....will have to see on those.

OK, I just went in to the kitchen and made my soup.  It already tastes divine!!

Here is what I used:

3.7 oz ground lamb
.45 oz carrot
.5 oz celery
.5 oz red onion
.5 oz red bell pepper (couldn't help myself)  ;D
.15 oz fresh garlic
1.6 oz diced fresh Roma tomato
1.5t Lea & Perrins worcestershire sauce
1cup chicken bone broth

plugged into MyFitnessPal it comes out:
387 cal
8 net grams carbs (net gr works for me)
25 gr fat
30 gr protein  (lamb 17gr broth 12gr) MFP rounds #'s up no biggie
dash salt and fresh ground pepper

Can't wait for it to be done!!

This is the recipe that first got me started using wooster & tabasco together in seasoning. It's a marriage made in heaven!  ;)

Oh, I forgot I added Frank's Hot sauce too. It was soooo good!!

Frozen meat is thawing for me to make another pot of this tomorrow.  I freeze containers of it for other meals.  Happy to hear of other ways to spark it up.

What is Frank's?  Haven't seen it in stores here.

Frank's is a cayenne hot sauce - I use it when I make naked hot wings. A lot the same as Crystal hot sauce since they're both cayenne sauces. It's hard to make a comparison of these sauces because their companies are so territorial about their peppers & their recipes, but tabasco original sauce appears to be made only from a tabasco pepper, while the company markets other sauces like habanero & jalapeno.

I made it with left over ground been/mild Italian sausage from my VAT of spaghetti sauce and remembered that 1 t. of Tabasco is too much for me.  I added a can of green beans and of course left out the flour, but altho' too hot for me, it was wonderful as ever. I liked the flavor the Italian sausage added to it.
