This recipe is for when you get a 'craving' for a cookie and there are none in the house.

I apologize for posting this link - just read the complete instructions and found that it requires me to turn on the oven for ONE cookie???  You got to be kidding!!!

I have a recipe like this somewhere around here, and it can be baked in the microwave for a minute or so. I'll try to find it & post how long. BRB . . .

Okay, here 'tis - looks like the amounts are about the same, so cooking time should work for your recipe as well:

Pecan Choc chip Cake/Cookie in a Mug

1 tablespoon coconut oil
2 tablespoons of granulated sweetener (or for fewer carbs, use a liquid sweetener of choice like WF pancake syrup - brown sugar blend is good but pretty high carb)
1/2 teaspoon vanilla extract
pinch of salt
pinch of baking powder
1 egg yolk
3 tablespoons almond meal
1 or 2 tablespoons pecan pieces
1/4 of unsweetened baking chocolate square, chopped

1. Melt coconut oil in the mug - 30 seconds or so in the microwave.
2. Add sweeteners, vanilla extract, salt & baking powder - blend well.
3. Add egg yolk and blend well.
4. Add almond meal, pecans and chopped chocolate. Mix well.
5. Cook in the microwave for 50 or 55 seconds.

One serving (half of recipe)
calories: 239
calories from fat: 197
total fat: 19g
cholesterol: 105mg
sodium: 55mg
total carbs: 4g
dietary fiber: 2g
sugars: 1g
proteins: 4g

Thanks Shanny.  ;)  I must admit I still like cookies even though they aren't normally found on LCHF way of eating.  :-[

Thanks for the cookie recipes! I'm still wondering why that mug cookie is a half serving!? No way, I'm not sharing my mug cookie either  ;)

I guess I am like that too.  I used to make a full batch of cookies using almond flour and then discovered that I have NO willpower and would eat way too many of them.  So now I do better (most times) if I have only one available to me.
