Carbs vs Glucose

This is really kantim's board, if we can find him. Discussions and links to studies & artcles tend to get scattered across the forum and so the board will attempt to have all scientific data in one place.

At the old place, on two occasions I had a debate (of sorts) with John and Salim who had said that carbs convert to glucose gram for gram. I asked for empirical evidence but it was not forthcoming. The subject however has continued to tickle my grey cells no end and if anyone has come across anything on the subject, I'd like to hear more about it.

That just takes a course in chemistry -- Mole per Mole does NOT equal gram per gram!  You have to take into account the  molecular weight.  As each molecule is chemically modified, the molecular weight changes!

Agreed. John had put up a link from some doctor's site which claimed gram to gram conversion but I was not convinced.
