Ideas please!

I had several pounds of ground meat I had to use up, so I made a VAT of my spaghetti sauce and I normally use it from the freezer to make zucchini spaghetti, pizza topping (low carb of course) and lasagna, but do any of you have any other ideas of ways to use it?

Creative cooks please share!

Well, I'm not that much of a creative cook but I like to make no bean chili and I use about 2 pounds of ground beef, onion, bell pepper, a Tbsp. of chili powder, 3 Tbsp. of Cumin ( I like Cumin  :) ) and a jar of LC tomato sauce.  I get the tomato sauce from Netrition and I think it's called Bellavita.  Nothing fancy and I am sure others may have better recipes but I like it and it makes at least 4 meal for me.  I haven't tried freezing it but I would think it would do OK.  I have also made it with black soy  beans and it comes out pretty good and is not bad on my bg.  I underlined soy because I made the mistake of using black beans before and they are not good for my bg.

I hardly ever cook, but we eat a lot of minced meat. Most of the times the meat is the base & add-ons can be eggs, either scrambled, fried or even an omelette with the meat going in as a filler. The other thing that we occasionally add to the minced meat is "brain". And by meat I mean goat meat as beef has been banned here, for a year now.

One of my favourite dishes is to make minced meat with small pieces of liver. Would you like to try that.

If you have already made it into spaghetti sauce, I'd say just freeze it in recipe size portions and use it for your recipes. 

Maybe add to one portion, some cubed zucchini, onions, peppers, mushrooms, basil and thin with broth and grate some parmesan on top to make an Italian style soup?

I realize you were gone to rehab and have a freezer emergency. If it were me I probably would have browned up the meat seasoned with salt, pepper,garlic powder and onion powder and frozen it in serving/recipe sizes.  That way it is neutral and can be used in a lot of ways.  That's all I've got...

There are a lot of nutrients in organ meat that provide some of the missing nutrients we miss out of by eliminating fruits and some vegetables from a low carb diet, at least that is what I have read.  I am not a fan of organ meat and don't really like liver but I read about mixing it with ground meat and tried it, and you can vary the amount you add, but I found that it is a great way to include it in the diet.  It really works for me.
