Wilted Lettuce

 Big bowl of torn lettuce leaves - my bowl is about gallon size
diced fresh scallions or onion of choice
several strips of bacon, fried crisp & crumbled (save the bacon grease)
1 beaten egg
2 tbsp. red wine vinegar
2 or 3 tbsp. erythritol or sweetener of your choice
salt & pepper to taste
about 1/3 cup of hot bacon grease

Combine the lettuce, onion & bacon bits; set aside.

Combine the egg with vinegar, sweetener, salt & pepper; blend well.

(If you're familiar with the technique for making hollandaise or mayonnaise, this is the next step.)

While whisking the egg mixture, slowly pour in the hot bacon grease & continue to whisk while the dressing thickens. Immediately pour hot dressing over lettuce & toss it around to coat evenly.

(the recipe can be made without the egg . . . I just do that because it makes a thicker dressing that coats the lettuce better.)

That sounds soooo good! I have to get some lettuce this weekend! Does it keep well for a day or two in the fridge?

I doubt if it keeps very well, but I have no evidence to show that, because we always clean up every last bite!  :-[  I would just make smaller amounts that can be eaten all in one sitting.

Is there a substitute for the hot bacon grease ? I'd like to try this.

The hot bacon grease is what wilts the lettuce and it adds more bacon flavor.  Are you going to use the bacon in the recipe?  I suppose you could use hot ghee or CO if you don't want the bacon grease.

Timewise

I have a dear family member that has always made this, it is really good.   I already have my lettuce going in the garden, so I cannot wait....

It is also great with fresh spinach!

Yep! We've done spinach too, or used half spinach & half lettuce. Spinach is another garden crop that really grows!  :D
