Broccoli Salad

I sometimes make this with cauliflower too - half broccoli & half caulflower. There are so many recipes floating around for this, and that's because it's delicious & nutritious. 

4-5 cups broccoli florets
1/2 cup sunflower kernels
1/4 cup chopped red onion
1/2 jar real bacon bits
4 oz. grated cheddar cheese (optional)
----------
DRESSING:
1 cup mayonnaise
sweetener equivalent to 1/4 cup sugar (12 drops EZ-Sweetz)
2 tsp. vinegar

Combine salad ingredients and chill.
Combine dressing ingredients and add just before serving.

If low-carb is not an issue, you can add
1 cup raisins -OR- 1½ cups red seedless grapes to this recipe, but these are not a good choice for the LCHF WoE.

This recipe looks delicious and I especially like it because I can make half of it for the LCHF WoE and the other half for my hubby who dearly loves raisins.  Thanks Shanny.

They made this in the rehab and it had a FEW raisins...perhaps only two per serving, but they were there.

I'm tempted to try it without sweetener.  Even before diagnosis, I've always preferred my salads to be on the savory/sour side.

I don't see why that wouldn't work fine. I make it heavier on the vinegar & lighter on the sweetener . . . BH likes his food pretty sweet, but he can doctor up his servings if he likes.

Oddly enough, when I make a rare batch of potato salad (with retrograded potatoes), he doesn't see why everybody doesn't make it like I do, because I go heavy on the vinegar & mustard there, and absolutely NO sweetening of any kind! He's a funny old duck, but he's my funny old duck! ♥ ♥ ♥

My husband cannot deal with mustard or pickles of any kind ... but I've successfully snuck dill pickle juice in there anyway!

I made this broccoli salad today and my hubby pronounced it 'excellent'!!!  Now I reckon we will debate who gets the leftovers :)

Oooh, I love broccoli/bacon salad.  It's a recipe I just haven't thought about for awhile, so I'm glad for the reminder.  With the warmer weather coming and backyard BBQ's, etc., this will be perfect to bring to a potluck.

Looks promising and easily doable. Might not add the sweetener. Will revert.

This is one of the salads we eat by the gallon during hot summer months. The other is Wilted Lettuce, but now that we no longer garden, we don't have that infinite supply of loose-leaf lettuce that we had for years before.  :-\

I LOVE BROCCOLI,CAN TAKE IT IN ANY FORM...............WILL SURLY TRY THIS , BUT WITHOUT THE SWEET TOUCH.

Thanks for the reminder Shanny, I've made this before, or similar, and really like it.  Time to make it again.

I made this salad again without the raisins and it just reminded me of how good it is and with Summer coming, I need to have a supply of broccoli in my refrigerator...  :D

This is a summer time favorite, but I don't feel like waiting for warmer weather.  I think I'll make some this week-end.  I make a large batch, and then I separate out about 1/4 and add some raisins and that batch is for my two sisters.  I have the raisin-free batch for myself.
