  But I rejoice  in the renewal of Easter.

Same here - our days are basically all the same. But because it was Sunday I roasted a chicken for dinner, so that's about as special as it gets! And we have chicken to eat for the rest of the week!    I intended to make the broccoli salad too, but didn't even get that done. We'd had a huge meal out Friday night, so decided to go easy over the weekend . . . Friday was our 30th wedding anniversary (we got a late start)

Happy belated Easter to each of you.  One day is mostly the same at our house too, except when our kids come home, which isn't often.  It is almost like "withdrawal" when they leave to return to their own homes.  House is very quiet and we look at each other and 'sigh'.

I learned that both of our sons have become interested in low carb eating, so cooking for them was easier than it used to be.  I should clarify the above statement to read:  except for breakfast.  They both remember homemade buttermilk pancakes which they expect when they come for a visit.  Grandson eats the pancakes but much prefers the bacon and being a a teenager he seems to have a never ending appetite for the things he likes.

For several decades I could remember the special smell of my grandma's pancakes - assume they were buttermilk since she made butter all the time from the cream from their own cows and would've had gallons of bona fide (not cultured) buttermilk. Hers had a distinct aroma unlike other pancakes and it was wonderful! In recent years I can no longer summon that olfactory memory, and it's a great loss.  I don't know that she was a good cook, practically speaking, but oh those pancakes!

When my boys were approaching their teen years, they used to take bets between themselves to see who could eat the most pancakes.  Pancakes were generally 4-5" across and how either of them managed to eat 10-12 pancakes is beyond my understanding.  I was blessed to have a Mother-in-law who although she didn't like me a lot, made the effort to teach me things about cooking my mother should have taught me but didn't.  I owe my Mother-in-law a lot and each time I make her buttermilk pancake recipe, I remember breakfast at her farm home in Wisconsin.  There was real maple syrup which my father-in-law made from trees on his farm.  I never appreciated what a good cook she was until she was no longer here to cook for us. 

My grandson posted pictures of pancakes on his facebook page and I'm honored to think that making pancakes for him was pleasing to him.

I learned a lot from my first mother-in-law too. She was a good person and a helluva cook! My mom was a helluva cook too, and it wasn't her fault that I didn't learn from her - I had other things on my mind (!) during the years I shoulda been learning from her and she had the brains to not pressure me about it. I have a lot of recipes from both of them, and even though I rarely use a recipe nowadays, I still keep those cards just to see their writing. Mom had beautiful penmanship - she was a schoolteacher before she married Dad, and she was one smart lady.
