Hello everyone,

We've lost a dear friend in Shanny. This forum came about because of the way the previous forum decided to treat her. We were 8 moderators who left that forum and decided to create a space on our own. Some drifted away, some remained. Finally, 4 of us came together and created The Diabetic Pub (our erstwhile identity).

Shanny was a kind soul who has guided thousands of diabetics to better management of their condition. In her honor we have decided to start this thread, which will be a collection of some of her notable posts. To go through her posts and put them up here, you will need to follow these steps;

1. Click Members in the Menu.
2. Then Search for Members
3. Search for Shanny by name
4. Click her name on the List that opens up
5. Under Profile Info, click Show Posts then Messages

The number of pages are chronologically listed starting from the most recent. Go to the post that you would want to see here. Click on Quote and then Copy/Paste everything that comes up in the text box to the text box here.

My next Post is an example of the above. This is her first public post on the forum. Most of her posts prior to this are a part of Pre-Operative Discussion that we had before opening up the Forum.

I hope my instructions are easy to understand, and would like to see more of her posts mentioned here.

I miss Shanny more than I can say! Some of her biggest contributions were her recipes which she shared willingly  with us.

One of my favorites is from the beginning her Bacon Weaves... a great substitution for bread just search Shanny and her recipes.

Because you can make up several at once, it means you have the option of having some on hand in the fridge without having to fry bacon each time you want some.

For a basic one-serving weave, take three slices of raw bacon and cut them in half. Then take three short strips & lay them on a parchment-paper-lined jellyroll pan (important to use a shallow pan with edges) with sides touching. The next three short strips are interlaced with the first three - like a lattice - again scooched together with sides touching so they bond together during baking & won't fall apart during eating. A pound of bacon makes five or six weaves, and that is just about what fills up a jellyroll pan.

Bake these for about 15 minutes at 350° (175°C); check for doneness, and maybe flip them over to hurry up the cooking process. Baking another 10 or so minutes usually does the trick, and I then drain them on paper towels before packing them in refrigerator containers for safe-keeping so they don't get broken bouncing around in the fridge. These freeze well too, and they're a godsend if you have a houseful of company coming!

Before they get too cool & crisp, they can be shaped around a dish to obtain a bowl-shape, or folded to obtain a taco-shaped form. And of course if you want to make them bigger, go for it!

skb, i never thought i could follow the instructions you have given, but after 2-3 tries, i finally got it right. This is a post of Shanny that I liked. I don't think I was with the forum at that time. It is a good post worth mention

IN our baby months a lot of the old forum folks had joined in and it looked like we might be going places. But most of them dropped off. Here's an interesting post from Shanny welcoming Sue (cdncatlover). Going through the thread reminds one of the old timers who have disappeared.

I'm just as bad and I also have a LOT of weight I could lose (b'lieve me, my avatar is a very accurate depiction!  ;) ) I was really strict in the beginning, but just can't seem to summon the same motivation anymore. I just know LCHF works, so I keep plugging along, and as the others have said, that wagon keeps stopping to let me climb back on. We're all in this together, and coming here every day really helps me focus. And one of these days I'm gonna get tired of scuffing my arthritic knees every time I fall off the wagon, and stay on it!  ;D

I discovered something else that was a bit disheartening - another of my favorite resources has moved on in his professional journey. Dr. Peter Attia has left  the Nutrition Science Initiative (NuSI), the organization he founded with Gary Taubes. Looking forward to seeing what is to come, but as I get older, I seem to be much more resistant to change!  :-\
