Roast Beef Hash

2 tbsp. butter
8 - 12 oz. fresh mushrooms, coarsely chopped or sliced
1 large onion, coarsely diced
2 cloves garlic, minced
fresh green pepper or chile pepper, coarsely diced
leftover roast beef, finely chopped or ground
1 tbsp Worcestershire sauce (or to taste)
leftover roast beef gravy, and add cream, if there's not enough gravy

Sautè mushrooms, onions, garlic & fresh peppers in butter until soft. Add roast beef & gravy. Heat over low heat until warm through and flavors have blended.

Hash usually includes diced potatoes, but having enough mushrooms makes omitting potatoes less noticeable. In fact, increasing the amounts of all the other ingredients makes it great!

Hash is one of my favorite dishes although it has been far too LONG since I made it.  Thank you for sharing this recipe, it sounds delicious!!!

I made this last night for dinner. I had to make a few adjustments as I didn't have any roast beef or gravy. I bought a 1/2" thick slice of deli roast beef to use. I cooked the veggies and meat with water along with some vegetable bouillon cube. Then I added some red wine and simmered on low for about an hour. Most of the liquid cooked off and it ended up being a rich stew like meal. Yum! Will definitely make this again.
