Need a few new ideas . . .

Our kids who are visiting this weekend present us with a coupla diet needs we don't normally encounter, and while I think we'll all survive, I just thought I'd toss out the question because I know some of you are more familiar with these & prob'ly have favorite recipes you might share.  :-*

Our daughter-in-law is a vegetarian (ovo/lacto, I think), so what are your favorite make-for-guests dishes?

And our son is celiac . . . or at least gluten gives him digestive trouble.

To a novice like me, this looks like we could be eating potatoes all weekend, but I know you fellas can give me some tips.  <3

Shanny, I don't have any specific recipe suggestions, but I did a quick internet search and found some recipes for celiacs at health.com.  One was for a three apple chicken salad that sounded yummy ( but of course, not good for diabetics), another recipe was for prosciutto wrapped basil shrimp.  If those sound interesting, just search for "recipes for celiacs" and have fun browsing.

As to vegetarian, I am going to try to make some vegan dishes for thanksgiving, because one of my nieces eats vegan.  I'll let you guys know how they turn out.

The kids have let us know that they'll go shopping after they get here, so I think if I have the first evening meal in hand, we can go from there with their guidance!  :)  Sure is nice when our kids get old & wise enough to undertake for us - heehee!

Shanny, if you tell me what ingredients you have I can come up with a few things. But keep in mind I cook more for HBP and may need to be reminded of sugar and carbs in my recipes.

Thanks loads, skhilled . . . the kids have come & gone so we're good to go for now. Our DIL did most of the cooking during the week they were here, and took into consideration my diabetes. She's a nurse practitioner and a very good one if she's up to speed on diabetes.

It is really a treat for me when someone visits if they help out with the cooking or at least provide me a few ideas about what they would like to eat.  My largest problem is usually with my grandson who is autistic and a very picky eater.
