Low carb breading

I was going to post this question in the Flour section but it said I should start a new thread.  My question is:  can I use a mixture of almond and coconut flour in place of wheat flour when I want to make breading for chicken or fish?  I'm not really that fond of crushed pork rinds as a substitute.

No reason it shouldn't work.  I usually use just almond flour as I find coconut flour a little on the sweet side.

Do you add herbs to the almond flour to make the breading savory tasting?  My husband is speaking honestly when he says my cooking is sometimes bland.

I use a mixture of equal parts almond meal, vital wheat gluten and grated parmesan cheese.

Going to try your breading idea today, that is if I can find my vital wheat gluten.... :-\
