Chorizo, green chile, cauliflower dish

I got the following recipe from the website:  ibreatheimhungry.com.  I've found several good low carb recipes there.  This one is called Chorizo and Green Chili Cauliflower Mac n Cheese.  It did not remind me of mac n cheese at all, but I really liked this dish and will be making it again.

4 C raw cauliflower florets
1/4 C heavy whipping cream
2 Tspb butter, melted
2 Tbsp chopped canned green chilis (mild) *
4 oz Mexican chorizo
1/2 C shredded sharp Cheddar cheese
1/8 tsp kosher salt
1 Tbsp chopped fresh cilantro (optional)

The author of the recipe said to spread the cauliflower in a microwave safe dish and microwave for about 10 minutes, until tender.  Instead, I just steamed my florets until they were tender, then let them sit in a strainer to drain for about 5 minutes.
I also purchased two already cooked chorizo links from my local grocery, removed the skin and crumbled it up.  If your grocery store doesn't have cooked chorizo available, I'm sure it would be easy to simply cook it up on the stovetop like any other ground beef.

Put the steamed/microwaved cauliflower florets in a 8x8 baking pan.  Top with the crumbled chorizo and half of the shredded cheese.  Stir to mix the cauliflower, chorizo and cheese.  In a small bowl, mix together the whipping cream, melted butter,  rest of the shredded cheese, salt, green chilis (*I forgot to buy green chilis, so I substituted 2 Tbsp of mild salsa instead) and cilatro.  Pour the mixture over the cauliflower, making sure it is evenly distributed.

Bake at 375 degrees for 15 minutes.

I made a small green salad as a side dish and topped my cauliflower casserole with some chopped avocado.  The combination made an extremely filling dinner!  My BG also really liked this dish.  Because I was the only one eating this dish, it ended up providing me with three full meals.

Interesting... Might even taste better if you roast the florets first.
