Guacamole from scratch

3 or 4 large avocados, pulp removed from shell & mashed
1/2 large tomato, diced small
1/4 cup minced fresh onion
2 or 3 tablespoons lemon juice
salt to taste
ground red pepper to taste (not cayenne)

Combine ingredients & mix well. Chill before serving.

This recipe is just to my own simple tastes, so always feel free to add others of your favorite seasonings . . . garlic, cilantro, lime instead of lemon . . .  ;)

Bumping this up a notch, just because it's such a great LCHF appetizer (besides being pretty low-carb & high-fat, it has a good amount of fiber!). Found some lovely avocados today when grocery shopping, and made some cheese crisps when we got home, so it was basically our purely delightful supper!  ~yum~

And I DID use cayenne tonight . . . but if you do, you gotta be very careful with it & gradually season to taste. There are plenty of hotter spices than cayenne, but it's prob'ly the most common & it can get too hot really FAST! ;)
