Liver Dumplings

To serve 6:

1/4 pound of chicken livers, washed and trimmed
3 eggs, separated
5 tablespoons of butter
1/2 teaspoonof salt
Freshly ground black pepper
1 tablespoon of finely chopped parsley
1 tablespoon of flour
About 3 tablespoons of fine bread crumbs

Chop the chicken livers as fine as possible and leave to one side.

Using an electric mixer beat together the egg yolks and butter until thick and creamy. Fold in the chopped livers, salt, pepper, parsley, flour, and bread crumbs. (I use to use a blender/food processor to mix together so the dumpling would be smoother.) Beat the egg whites until they stand in soft peaks and then gently fold into the liver mixture. Chill for 1 hour. Add more bread crumbs if necessary to form a light dough.

Form the mixture into small dumplings with the aid of 2 teaspoons dipped into cold water. Simmer the dumplings in hot chicken soup/broth/consomme for 6 to 8 minutes.

**Bone broth would be excellent too. I've made them with beef liver too. The whipped egg whites make them so light and fluffy. Add some onion, celery, carrots to make a great soup.

It won't be possible to eliminate all of the flour, but just reducing the amount.

I bet this is great. Looks like a good one to hang onto as the fall progresses.

Doesn't look like it makes a great deal and a single tablespoon of flour isn't bad and might be okay to use almond flour. The bread crumbs aren't something quite so negotiable, I think, but finely chopped almonds or walnuts might do it.

Plenty of room here for different meats also along with seasoning. I expect I'll add hearts and gizzard among other things.

This really is a wonderful recipe!! I may try GF flour and ground pork rinds for the breadcrumbs... I really miss this dish.
