Thank you and I hope everyone had a wonderful Easter, however you may have spent the day.  I drove over to the town where my mother (now a widow) lives, and spent the day with her and three of my sisters.  It was a lovely coolish spring day, and my older sister and I took the dog for a nice stroll in the afternoon.  For our Easter meal, we had turkey breast, steamed green beans, mushroom and green onion quiche, fruit salad (I had a few blueberries only), and a rose wine.  There were also bread rolls, which I also ignored.  I guess the only high fat dish was the quiche, but overall the meal was fairly low carb.  Returned home to have a "piece" of a cheesecake I made from a recipe found elsewhere.  It was okay - I'll share the recipe in the recipe section and any suggestions to improve it greatly welcomed!
