No, I don't check during the day. I find it drives me to push for higher #'s that ultimately end up hurting me over the long haul. I do what I can do and feel comfortable doing. I know my body well enough not to push, it doesn't end well.

A nice 6,106 steps yesterday. Knee was feeling better, just did what I was comfortable doing.

Yeah I agree that pushing to make a set goal can cause problems, especially at our age.  I used to push hard to make my 10,000 steps and paid for it the next day or longer.  Fitbit had a goal to get 250 steps each hour and had a reminder each hour at 10 min before the end of the hour if you had not done it which I was good at and it was good to keep from sitting too long without moving.  Not that demanding but I thought it was a good thing to do.  The Apple watch also has an hourly reminder but doesn't look for 250 steps, just that you stand and move for at least 2 min. which I do now.  Without the reminders I would probably sit at the computer for hours at a time.

I don't really aim for any specific # of steps per hour. But I do get up and walk several times each hour. By the end of each hour I just go by how my knee is feeling to decide if I want to go more or not.

The trick I use, most of the times, is that I don't call my staff into my cabin, rather I get up and go their room/s and give the instruction. That way I get to 'get-up' every few minutes and get some steps in as well. I would love to have a standing desk, but I have so many visitors during the day that it is not practical.

So the apple watch is not capturing everything?

There is a mismatch between the treadmill and the watch. The watch gives lesser distance but more calories. Even the Stepz app and the watch's workout app disagree with the number of steps. I have tried making changes to the stride data but it doesn't affect the workings.
