LC Creamy Red Pepper and Spinach Cheesy Skillet Chicken

A good friend has had a full shoulder replacement and I'm trying to freeze some meals for her.  Last week another friend sent me a recipe she'd made for supper and liked a lot, so I made it yesterday and it was yummy and let me put 3 servings in the 'Betty Box' to take her.  I'll make it again for my box.  I love one pot meals.

1 T. oil
4 6 oz skinless and boneless chicken breasts (I used two I found on sale at a store specializing in stir fry foods) pounded thin and cut to size
salt and papper to taste
1 diced onion
2 cloves garlic, chopped
1/4 red pepper flakes (optional)
1 C. chicken broth or stock (I used a bit less)
1 12 ounce jarred roasted red peppers, drained
4 oz. cream cheese (optional goat cheese)
4 cups baby spinach

Directions:
Heat oil in large skillet over med. heat.  Brown the chicken pieces until golden brown, about 5 min. per side and set aside.  (Could use chicken tenders)
Add onion and garlic and sauce until tender (took 3-5 minutes)
Add red pepper flakes, if using
Add the pureed mixture of broth, roasted red pepper and cream cheese and simmer til warm and cheese fully melted and add the spinach and cook until wilted before adding chicken and season with salt and pepper to taste.
I ate it as is, but as Betty is not diabetic so if she likes a mild hot, she may like it over rice. I used the flakes and it was a bit spicy for me, and mashed cauliflower would be a good base for me.

This is pretty and would make a good company dish and if doubled will make 8 servings.

A serving contains 10 carbs and 50 g protein

This sounds stunning, Pat! I'll make it soon . . . I won't be able to make it often because spinach is pretty high oxalate for me & my history of kidney stones, but I can work it in now & again. I'm like you - prob'ly go easy on the pepper flakes - we like a little spicy, but sometimes those flakes fool me!  :P

This sounds yummy Pat!! I am definitely going to make this!!  I need some new rotations to go into the freezer for quick meals and this is just the ticket!  I like it spicy and I have some smoked chipotle pepper flakes that I think will be perfect here!

This looks really good and easy to make too! I think I'll try 1/2 a recipe to start out.  I like the idea of freezing some for a quick/safe meal!
