Soul Bread???????????

I just ran into Soul Bread mentioned on my FB and am wondering if any of you have tried it?  I am allergic to whey, so I'd have to sub egg protein and generally it works the same, but before I waste too much time or effort I'm wondering if it is worth the effort and expense before I try it if there is any experience here.

I made some this morning by a modification by Kristie on a video I found.  It had to be a bit sweet as the egg protein I had I bought for smoothies  was custard flavored. I used both bacon fat and olive oil equal parts by accident and no sweetener and it made a big loaf that smells and tastes like a sweet bread.  It will make fabulous toast or probably even muffins, but if I keep this up I'll probably get some unflavored kind.  This clearly is a recipe worth playing around with as she suggested.  Hope some of you try it and feedback.  There is a FaceBook page about it that is worth checking out too.

Here's my twist on the popular Low Carb Soul Bread Recipe
Recipe for Modified Soul Bread with Oat Fiber

12 ounces of cream cheese, softened in the microwave
4 eggs
¼ cup heavy cream
¼ cup melted butter
¼ cup bacon fat melted
2 tablespoons apple cider vinegar

Mix all ingredients well and set aside. Mix dry ingredients

1 ¼ cup whey protein isolate (Isopure or Hoosier is recommended) (I used Gold Standard egg white protein powder)
½ cup oat fiber
¼ tsp salt
1 package yeast (for taste)
¼ tsp baking soda
1 tsp xanthan gum
2 ½ tsp baking powder
¼ tsp cream of tartar

Mix all dry ingredients. Use a sieve or sifter to sift dry ingredients into the wet ingredients. Fold in lightly. Do not overmix. Add 4 drops of liquid sweetener if you'd like.

Preheat oven to 325 degrees. Pour dough into a 9" by 5" bread pan greased liberaly. Back for 45 minutes until golden brown. A toothpick can help test for doneness in the middle. Don't under bake or it will sink as it cools.

OMG - I found that Kristy video too! I even have oat fiber, so I think it's time I tried soul bread too!  ;D ;D ;D

I so wish I had known how to post a pic of it, but instead cut it into slices for the fridge and just now had the idea of serving them 2 to a plate, covered with strawberries, fresh peaches or blueberries and a pop of whipped cream for a topping as a dessert.  Mine is kinda sweet tasting from the custard flavored egg whites and also looks like the texture wise of pound cake so it should be good.  A friend came by and tasted it and loved it as is.  As I'm not a fan of sweet, but I love savory, I can't wait to try more ideas.  Glad you like the sound of it...it sure earns its name IMHO!.

I saw you (Patdart) were kind of sad no one had yet tried this recipe and reported back.  I am a lazy cook - I looked at the list of ingredients and found there were too many for me :)  But I think I would try out this recipe once I have reduced my work schedule to just 3 days per week and have extra time on my hands.  Thanks for sharing it!
