Diet guidance ?

Hello all,

I've gone through the Blood sugar site and some more through links I found there. I gather that grains and sugar presents the larger problem and I've decided that I'd be better off avoiding these.

Me and my husband are both accountants and work 5 days a week. Our daughter is in school and attended by a baby sitter or my sister who stays close by. We are largely vegetarians though we love to eat fish traditionally. Being Indian, our dependence is mostly on fresh produce cooked at home.

Considering the above, I'm finding it difficult to plan meals that will fulfill the LCHF criteria. Especially lunch, which is a packed tiffin for me and my husband. Being full time in service, time is also short for grocery shopping and/or cooking. I've gone through the recipes section but find incorporating much of that difficult into our diet.

Can you suggest a few meal ideas, specially for lunch, which has to cooked early morning or previous night and carried to office.

Hello sweety,
You're very right about the grains & sugar. Avoiding them or giving them up completely is a good start.

We eat a lot of vegetables, meat, fish, poultry and nuts. It's just that we add a lot of cream, cheese, butter & ghee to our foods. That adds satiety & energy. You can also do the same. Try for a week or so & you should be set. It's not as difficult as we think it is. I think you'll be able to do it without much problem. Keep updating us on your progress.

Cauliflower is one of the most versatile veggies for lc/hf eating. Cook it and chop fine and you have a great  rice substitute. Keep the flowerets whole and it can substitute for potatoes in soups, stews and even potato salad. Cook and mash and you have mashed "potatoes".  It can even be used for pizza crust!  I haven't tried it but chef google will give you that recipe.

Also finely sliced cooked green cabbage can make a good bed for dishes with sauces.  Just about any dish you make can be converted to lc/hf with some imagination.  Google is a great help with this too, just google the name of the dish you want and add low carb/hugh fat to the name.  You'll get lots of suggestions.

It is hard at first, but once you get some basic recipes going it will get easier.

Hello Sweety,

We've also given up all grains (we eat rice sometimes) but then his numbers have dropped like a bomb from the 200s into the low 100s. At first we thought that we would be hungry all the time, but adding stuff like cream, cheese and butter has helped erase those pangs. Can be easily done, please do give it a try.

There are lots of low carb options for breads. We use cauliflower rice as a good substitute for the grain. That's a good option to eat chinese once in a while.

I would suggest bringing left overs from dinner for your lunch the next day, if that is possible.  I've brought left over crack slaw (recipe should be on this site), left over chicken cassarole, etc.  You could increase the size of the recipe you make for a dinner meal in order to purposely have left overs.

I have never been much of a cauliflower eating person, but I see that is about to change.  From some of the things I've googled it seems to be a real wonder vegetable for lc/hf!!

this is what i want. diet guiidance.
im right now on temporary deputation to an oil well in the gulf. all meals are provided by the company in the cafeteria. dont hv much choices. what to do in a situation like that.

That is really tough.  Try to stay away from all grains and anything sugary.  Load up on plain meats, (no sauces) and veggies, add real butter (not margarine) to everything you can.  Eggs and bacon are great, no toast or anything breaded.  Do you have any options for selecting you meals?  Maybe gluten free might help but best is if you can get low carb/high fat.  I can see this is going to be a challenge to you.

Exactly what bigskygal said. Stay away from the grains & sugars and you should be fine.

I don't know what sort of food choices you have Rocky, but I bet most of them are carb-heavy.  Others have already suggested having bacon and eggs for breakfast if possible.  For lunch and dinner, if they offer hamburgers, you could eat the burger, with cheese, lettuce and tomato and throw away the bun.  Avoid french fries or any type of potato side dish, but if they have green beans or broccoli, cauliflower or zucchini as a side dish - enjoy that.  For dinner, hopefully they would offer grilled or baked chicken, ham, turkey, roast beef, etc.  Also, salad greens or spinach.  As someone else already said, be sure to add butter to your vegetables - it will help fill you up :)

choices are limited, but the food is good. usually a buffet of meat, chicken, some fish few vegetables, salads and some ice cream mostly. based on your inputs i have avoided all breads and rice since last evening. took two bowls of soup instead of 1. but then im not very satisfied. i feel hungry all the time since.

For that hungry feeling you need to add more fats rocky. We also felt like that initially, but no more.
