I also used one of the recipes called "Almond cake".  It was delicious and moist.  I ate mine just plain with a dollop of plain Greek yogurt on it.  My husband, who isn't diabetic, had his with vanilla ice cream.  We will definitely be enjoying this recipe again.  Easy to make with only a few ingredients and keeps very well covered in the refrigerator.
