Italian Zoodles

This isn't quite a recipe, but what I made last night for supper and so amounts are up to you, but...

I used a 8" skillet and made the best supper last night...I took some zoodles, Italian sausage, marinara sauce, and parmesan cheese and it was so good and filling. Couldn't eat it all, so had the rest as b'fast. It was one of those clean out the 'fridge things so I didn't measure, but it made a full plate full. I just browned the sausage, added sauce LC of course and popped the zoodles in the pan and put the lid on for a couple of minutes, poured the Parm on it and to was filling and fantastic. Best Zoodles I've made so far in 3 years!

Maybe an idea starter?  :)

Yum Pat!!  I do this a lot!!  I even bought a spiralizer on Amazon so I could make the zoodles quickly.  I stand in front of the refrigerator and decide what I can put together for a meal with hopefully a leftover for the freezer.

Zoodles make a great frittata too!!

How does this freeze?  I've found they don't freeze well.  How do you do it?

You are right, the cooked zoodles don't freeze that well. If I do freeze, when I reheat, I will add some fresh to the dish and that helps.  I have frozen uncooked zoodles and they do a bit better. Zucchini is a very wet veggie and doesn't really freeze well.

I love my spiralizer and that's about the only way I eat zucchini now.  Thanks for sharing your quick meal - it does sound delicious.

OK, this looks like another good and simple meal!!  I love zucchini.  I am going to have to look for lc marinara sauce. Are things like these in stores or do I have to order online?

I guess instead of the sauce, I could just add extra butter and some Italian herbs.

Kelly, I add all sorts of things like garlic oil and fresh basil, as well as cheese, but I had bits of two bottles of marinara sauce and just dumped both of them in to use them up.  It was so good I had it again this afternoon as a late lunch.  I try to keep zoodles in the 'fridge frequently in a ziploc bag and two med/lg will make two meals for me at least.  I ordered the Bella Vista, but asked today and was recommended to check WM for Rao's and didn't find it, so I ordered a case of it from Amazon Prime this afternoon.  I've found that a bottle lasts me many meals and doesn't go bad if kept in the 'fridge  (months)!  I hope I like it,but it has great reviews.  The BV was ordered from nutrition I think.  Rao's has 4 carbs for 1/2 c. which is what I think the BV had.  A duh, I had never thought of just adding the meat of my choice would make it into meat sauce.  :(

I am so glad that you've posted this recipe.  Several weeks ago my hubby and I were shopping at our local market.  I saw a spiralizer and it just happened to jump into my cart.  Of course my hubby said "What are you going to do with that thing"?  Told him - It makes faux noodles.  Well to make a long story short, I made them and neither of us liked them because the seasoning that I put on them was so bland.  Thanks for all the good ideas - I will try the zoodles again.

You are going to love this gadget!  You may want to google zoodles for millions of ideas for using them...

Hope you do try and love this dish.  I use the mild sausage, but I've heard it's really good made with the hot.  Also, use a larger skillet for two servings.  Also a good lot of zoodles, I made it last night with too few.  I only had one zuc and it wasn't very big.

Pat, when it comes to cooking - I need all the help I can get because cooking does not come naturally to me.  The thing that also frustrated me when I made zoodles the first time was that so many of the sauces in our store were not suitable for LCHF.  Lucky for me that my hubby is easy to please and will give a recipe more than one try.

Make your own sauces if you can't find some that are suitable.  I've just bought Rao's spaghetti sauce...4 carbs per serving again some I had to buy from WM that has 15 per serving.  Linda's Low Carb recipes are a great source as well as many of the Atkin's site for dieters. 

My favorite new drink is one Shanny shared...I take a glass of root beer and add whipping cream to it and suddenly have a root beer float.  I'm trying to get enough fat in my diet and that has really helped and is so good.  I'm not a natural cook either.
