I've purchased 3 bottles of virgin coconut oil. What is the best way and time to consume ?

You can cook with it, add it to foods or beverages or take it raw.
I have about 3 tablespoons raw every morning, though timing is not of importance IMO.

I have it in my coffee along with ghee in the mornings.  I like to use it to sauté shrimp and of course in making fat bombs.  Just google fat bombs to get all kinds of recipes for them.

Thanks. I will try all of the above and see what suits me. I think raw will be the best as well. I have no issues with taste as we use a lot of coconut oil for our cooking, as I belong to the coastal part of India.

I use coconut milk and oil exclusively instead of dairy - except for ghee which removes the "bad" dairy proteins.

Interestingly, the one food I can't abide is dried, shredded coconut. However, I get none of that flavor with these products, but only a very rich quality that is delicious.

It's not altogether clear the extent to which this benefits diabetes, but I think it's worth trying.

Try www.flaxindia.in for the info on the cold pressed coconut oil. It's available in almost all stores.

Coconut oil is certainly becoming more mainstream, at least in my area.  Almost every grocery store has coconut oil in their baking aisle now.  If you live near a Trader Joe's, I know they have virgin coconut oil at a fairly decent price.  My local grocery stores also carry it.  I use it daily on my skin - so that's not diabetes related but it does work very nicely as a body oil after showering.
I also put it in my coffee.  I don't make the power coffee in the blender much - it's more work and clean up than I prefer.  So I just put in a tablespoon of coconut oil, plus HWC, and stir until fully melted/blended.

Interesting conversation.  I have been putting Coconut Oil in my coffee along with butter and HWC every morning for at least the last 3 years.  I also make fat bombs with Coconut Oil as one of the ingredients. 
I have had Psoriasis for around 35 years and at one time it covered large parts of my body.  For some reason it started to clear up in several areas and I don't know why.  I have been given a ton of different prescription creams and ointments, mostly some type of steroid application, by my primary doctors and Dermatologist with no effect at all but then it just started to clear up except  for around my ankles.  That is the last area I have it and it remains stubborn.  I have heard of other people using Coconut Oil for skin use and Tuesday I had tests ordered by my Cardiologist including ultrasound of the arteries in my leg.  The tech doing the testing saw my Psoriasis  and suggested Coconut Oil and I thought " why not" I actually have nothing to lose.  So I have started to use it and will see if it does any good.  Certainly can't hurt anyway.

Wally - I hope the coconut oil helps with the remaining psoriasis around your ankles (fingers crossed).  I wonder if your consumption of daily amounts of coconut oil might have had an effect on the psoriasis that cleared up.  (Things that make you go 'hmmmmmmmm'.)

Actually I know that the coconut oil didn't have anything to do with the psoriasis clearing up and also neither did low carb or lower blood sugar.  I would love to attribute the clearing up to something I did but I honestly don't have any explanation for why.  It started 2-3 years before I started on my LC diet and took much better control of my bg so there had been no change in my lifestyle when it started to clear.  So, as pleased as I am that it did clear up over most of my body I am puzzled as to why.

There are several studies which have indicated high risk of T2 diabetes with psoriasis. A Google search will open up many. One sample given below ;

Maybe the improvement in your blood sugar levels did have a role to play in it.
