70 Second Bread

BREAD in 70 seconds

. -- 1 egg (beat well)
-- 1/2 teaspoon baking powder (beat into egg mixture)
-- 2 Tablespoons Flax Meal (beat into egg mixture)
-- 1/4 cup shredded cheddar cheese (beat into egg mixture)

Ok! Find something that looks like a piece of bread to cook in the microwave... I just use a little square Tupperware (plastic container).

--- Melt butter to coat the bottom and sides.
--- Put in the microwave for 1 minute.
--- Turn over and cook for about 10 more seconds.

It comes out like Thick piece of bread. Split it in half into two thinner pieces if you want to and Toast, if you want toast. It's Real bread.. The kind your mother used to make.. Delicious, chewy, dense. Butter melts on it beautifully. The whole recipe, depending on the cheese you use is 4 carbs. And it's super filing and mostly insoluble fiber!

Of course Microwaves differ so cooking time will vary.  I do mine 60 seconds in the container then dump it on a paper towel and cook for another 20 seconds.  After it cools I slice it into two pieces.  It does toast well.

I'll have to give this a try one of these days.  Sounds very similar to a bread I used to make last year, but I did a combination of flax meal and almond flour.

Funny coincidence, I made this today and am having a BLT for dinner tonight !   ;D  It took a couple of times to get the timing right but it is super easy and quick.

I also made this bread and used it like a tortilla around a hot dog left from our weekend cookout with our sons.  The bread was delicious and I will definitely continue making it.  Thanks Wally.   :D
