Low-carb Yeast Bread

A new LCHF cook has made her debut on YouTube, and I hope she makes a go of it, because this first bread recipe looks to me like a winner. The ingredients are pretty ordinary, if you're already familiar with LCHF cooking, and I'll be trying it eventually. If any of you beat me to the punch, please post your reviews!

Low-Carb Yeast Bread for bread machine

1 C. water
2 eggs, slightly beaten
2/3 C. ground golden flax meal
1/2 C. oat fiber
1 1/4 C vital wheat gluten
2 Tbsp. softened butter
4 Tbsp. Swerve, Sukrin ( powdered)
1 tsp. salt
1/2 tsp. xanthum gum
1 tsp. honey for the yeast to devour
1 Tbsp. yeast

Same recipe for regular mixer.

Looks interesting and has a lot of ingredients that I do not normally have on hand.  I might try it someday, as I used to enjoy making yeast bread.

I tried this tonight, and had a little trouble getting it together - operator error, y'know.  :-[ My yeast was old, and tho' it proofed, my bread rose about half as high as hers did in the video. I forgot the eggs first time around, so kneaded them in at the end, and I'm sure that wasn't the best procedure.

But there's always a silver lining . . . I ate a slice with butter, and while it wasn't awful, I found myself thinking of what else I could do with it besides feed it to the birds.

Having been raised on bread & milk (anybody else out here familiar with this?), I crumbled some in a bowl with some sweetened cream, and that was pretty good. As a matter of fact, I offered it to BH, and that old skunk polished off the whole bowl!

So! What I'm going to do is crumble the rest of the loaf, combine it with the syrup from this breakfast mix recipe, and toast it in the oven same as I do the breakfast mix recipe. Keep your fingers crossed. Sometimes these flights of fancy turn out well, but there are definitely those other times when . . .  :-\

Thanks for the 'advance' warning, I will know better than to share it with my BH right after I bake it tomorrow.

Yours may turn out perfectly fine, GB . . . I'm sure my old yeast & other problems caused the failure. I may try it again in a few weeks. Please do post a review of your experience with it!

Nuts!...I must have neglected to put xanthum gum on my grocery list when I ran out.  So I will have to wait until I do my weekly grocery shopping to make the bread.
