Chicken Divan recipe

I tried this recipe over the week-end and really enjoyed it.

Instead of chicken, I used left over rotisserie turkey breast.  I knew I'd prefer to use it up in some type of casserole because it was rather dry.  This was perfect.  My BG readings after an hour also approved of this dish.

This looks Yummy!!  I read through the comments and saw that people used turkey or tuna as subs for the chicken. This would make a great tuna casserole!

I agree that this would be good with tuna as well!  And the next time I make it, I will probably use chicken. I might even toss in a little bacon ;)

This recipe looks very interesting and it is nice to know ahead of time that it is blood sugar "friendly".....:)  Thanks for sharing.

I like the way you all think/cook - switching out ingredients, adding bacon, lol! I prob'ly wouldn't boil the chicken - instead would brown it in the skillet with ghee (isn't it great to find other cooks who use ghee?!) . . . color always means more flavor.

This looks like another one that's going into the rotation! I'll move it over to Recipe Circus right quick so we don't lose it!

Thanks Shanny - and I'm with you on browning the chicken in ghee or butter instead of boiling it.  I think everything just tastes so much better with butter added.  I had the left overs of this dish for my lunch today.  My sisters liked it too, so there wasn't much left over - but I'm still full 2.5 hours later.

Hi Rhiannon, it's good to hear from you, it's been a while.  Thanks for the recipe, it really looks like a keeper.  I'm moving this week so it will be a bit before I can try this but I am going to as soon as settled.
