107 this morning.  It was 66° this morning at 6:00 AM and only 98° for a high yesterday.  I really like below 100°.
  I ran into a recipe on Delish.com for Chicken, Spinach, Artichoke, Rice Casserole and made it last night.  I wanted to try retrograding rice and see how it worked.  The casserole came out delish and I did pretty good with the rice so I think it is a keeper.  I made the rice the day before and put it in the refrigerator to retrograde.  If anyone is interested I can post the recipe.
Type 2 since 1993.  Control with LCHF diet.

walkerwally1~ In regard to retrograding rice do you think it makes any difference as to the variety _ for example:  the different kinds like long grain brown rice or Jasmine rice etc.?  Interested in seeing your recipe for the casserole.

Wally, doesn't reheating the rice reverse the retrograde? Or do you just stir it in the warmed casserole?

I honestly have no idea how other types of rice react to retrograding but I would guess that they would all be pretty much the same. 
The rice worked the same as the baked potato and reheating apparently does not chance the retrograding.  I would suggest that anyone planning on trying this to give it a test and see how you handle it.  It works for me but I am not sure if it does for everyone.

They also have a whole section on low carb recipes.  I haven't looked at all of them in depth and of course low carb is a relative thing but some look quite good.

My understanding of the retrograde potato was that you cooked it, cooled it down and just slightly warmed it up to eat it or made potato salad. If you reheated it to hot, it was just like a regular potato... maybe I misunderstood??

You make a very good point. Since the macronutrient content of different varieties are supposed to vary, I'm sure so does the retrograding end result.

242 this morning. (CGM reading was 168...)

Definitely, I'm hating the way Medicare is handling CGMs and supplies. Inevitably, I'm running out of sensors and having trouble re-ordering due to complications on the insurance side. Hopefully, my current one lasts, but I'll still have at least a day without until new ones arrive.

Thanks for the recipe, Wally. I may give something like this a try in cooler weather with risotto (arborio rice) to see if it works. There are tons of low-carb and keto recipes on Epicurious and Pinterest that may at least help with ideas for different things. Unless you're just crazed for fast foods, snacks and fruits, there's most always a way around the carbs, even with some desserts.

82 this morning.  Still staying under 100° Nd at 65° this morning.  The weather guys keep saying it will warm up but so far it looks like it isn't.  Enjoying it while it lasts.  It still can get pretty hot in September.
I haven't read anything about reheating a retrograded item will reverse the effect but at least my experience is that it does not.  Even if it is retrograded it doesn't mean that there is no effect from the carbs, just that there is less.  I can't get away with a whole baked potato but a half works just fine.  I still think that if someone wants to try it you should experiment with it first to see how you react to it.  I am really enjoying having an occasional baked potato but not going to over do it.

115 this morning.

I have tried eating potato salad (commercial) and I can manage about 1/4 cup which is a nice change from none at all.  The same holds true (for me at least) for rice and boiled, cooled & reheated potatoes.  Since I eat only homegrown potatoes maybe that alters the impact somewhat.  At any rate I absolutely must watch the portions and take the appropriate amount of insulin or I am looking at a huge spike.  I do enjoy a small portion of some foods previously thought to be on a forbidden list for me.

One thing I cannot get by with eating in any amount is oatmeal.  I've tried it too many times with a horrid outcome to try it yet again.  Love it, but the body says "No".  We're all different - "your mileage may vary."

Just when I hate it, my CGM is spot on accurate like this morning.

I have oatmeal every morning, but admittedly a very small amount. Same goes for any carbs I eat which are usually pasta or nuts, but only at most about 10 carbs worth. It's rare at this point to be able to justify ice cream and I work at avoiding those lows. Haven't eaten a bite of fruit in years not counting tomatoes.

Decent weather here with heat and humidity coming through mid week. It'll be fine with me and a good time for grilling.
