Grammabear, I've never used gf breadcrumbs before, I suppose they would work. I'll post the recipe now.

I attempted the gluten-free affair several years ago without noticeable result and suspect it's a fad unless you're actually celiac which isn't common. One thing to watch for is those alternate GF flours going bad more quickly than white flour.

Supposed to be sunny and very hot today; no rain! A good day for grilling finally.

I got the recipe for meatballs that uses GF breadcrumbs from a young lady who does have celiac disease.  For her, avoiding wheat products is imperative.

99 this morning.  So far the retrograding has worked pretty good for potatoes, I had 1/2 of a baked last night.  I want to try it with rice which is also supposed to do well but I haven't yet.
I don't see how GF would help with your bg.  I looked at Gf bread crumbs and it was 32g carbs for 1/8 cup and I looked at some LC bread crumbs on Netrition that were 4g carbs for 1/4 cup so I would say the LC bread crumbs would be what I would use.  I have been doing OK with the LC bread I have bought from Netrition.

Thanks for the idea Wally, I'll check out netrition.com for the low carb bread crumbs. May be able to get by with no flour at all.

I was daring last night and made a vegetable salad with a Thai dressing pretty heavy on peanut butter and chopped peanuts. I was nervous about the carbs, but it doesn't seem to have caused glucose problems. I love peanuts and am glad to be able to include them.

Yesterday's weather with no rain was great affording me the opportunity of grilling enough meats to get through a few less congenial grilling days yet to come. I've found that meats of all sorts can be successfully reheated by heating in the oven wrapped in tin foil with either a bit of olive oil or caramelized onion providing moisture with no appreciable drying out or change it flavor. I dislike grilling just a single dinner once I've got the grill going.

95 this morning.  At 6:00 AM it was 73° which is a nice change although still 102° for a high.
I was just reading about the flooding in India.  Really bad and many deaths. :

The flood pictures from India are really tragic.  My heart goes out to the people who lost family members and/or their homes.

Yes, thank you. We are very far away from the State of Kerala. Newspaper reports put the toll at 165 but I guess the real number will come out much later, after it's all over.

Glad you're far from Kerala, SKB, and safe!

Decent sales on uncooked shrimp and scalllops prompted me to get some yesterday. While the seafood we get locally here isn't generally great, these look promising and should be a nice change if I can do them properly. I've made a good veggie salad with a Thai peanut dressing with red curry that ought to go along well (carbs, yes, but not terribly much so in a single serving).

Still rain, heat and humidity here. There are many reports of flooding in the northeast but nothing like Kerala, thankfully. Surprisingly, my little trout stream hasn't flooded, at least yet. Trout fishing is at its simplest when it does as I've only got to take a walk through the yard when the water recedes and collect the fish left stranded...

Glad to know you are safe SKB, the news here is saying the death toll is over 320 but of course that will change.
Tamagno, I envy your fishing challenge !  I love scallops and shrimp on the BBQ if they are large enough to put on a skewer.
